I love using my Fullstar Veggie Chopper for this recipe – it’s one of my favorite kitchen gadgets. It makes it so easy to get the perfect diced veggies. This thing is sharp! I think I cut myself just looking at it, so please be careful.

The green pepper is the replacement for jalapenos in this recipe. You still get the crunch and green color without the heat.


This is delicious with chips and makes a great topping for meat and fish. You can even mix it into salads and use it to top chili!

Mild Pico de gallo (kid Friendly!)
You’ll love this delicious mild pico de gallo recipe. Great for picky eaters and folks who don’t like a ton of spice. Â

- Yield: 2 cups
Ingredients
- 4 plum tomatoes, diced
- half a white onion, diced
- 1 green pepper, diced
- 2 cloves of garlic, finely chopped
- fresh squeezed lime juice (1 good sized lime, to taste)
- salt and pepper
- chopped cilantro (optional)
Instructions
- Mix all diced veggies together. Â
- Add in garlic, lime juice and salt and pepper. Â
- Finish with a garnish of chopped cilantro.
- Enjoy! Â
Notes
The cilantro is optional. I personally love it, but if you think it tastes like soap you can omit. Keep refrigerated. The tomatoes will release a lot of juice – just pour out if you don’t like it super runny. This pico de gallo is great with corn chips, but also has a topping for meat and fish and an addition in salads. Â
